I am looking to spend about $700 in total (bike, front & back light,
fender, long lock and odometer).
Is there anything I should avoid?
I tried the hybrids and must say I felt like a granny, but am told it
can be adjusted to fit more like a mountain bike.
I did try a TREK mountain bike, and NORCO hybrid.
Any hints & suggestions are welcome.

Some Norco models used to be heavy steel frame rather than Chrom-moly. If
you want a relatively cheap bike that the thieves won't be fighting each
other to rip off, compare the weights of different models. Lighter bikes
handle better, and they're much easier to lug. Brand names aren't all that
important in your price range. Pick it up, and take it for a for a test
ride. Try a few bikes; if you're pissing off the salesdude, you should
probably go somewhere else.
You might get lousy components; but if you plan on cycling frequently; you
can upgrade those when they crap out. The parts of your bike that will last
(if they're any good) are the frame and the shifters.
Oh yeah: if you can, get one of those kick-lock kickstands. They won't
foil pro thieves; but it's amazing how many people I've seen have trouble
figuring them out. It might save your ride during a 30 second pit-stop at
the 7-11.
