Please see the section titled "Emacs Local Variables" (current pages 54-55) in Chapter 5 of the PDF manual and the cross-referenced section "Controlling Backups with Emacs Variables" (page 261-262) in Chapter 10. (They're described rather than enumerated but hopefully that will suffice. ;-)

You may also find Edit -> Insert -> Emacs Variable Block... to be useful.
