I've been googling really really hard, but it's not getting any
clearer.
Can someone please explain the 'Ponies' feature to me?
Is it some kind of in-joke?

I'm guessing, as I don't have the new version yet, and I'm not in the
development group. But a search for 'ponies software mac os x' pulls
up Circus Ponies' 'NoteBook'. So, my guess would be either a way to
open those data files, or a way to synch to them.

It's a joke. Notionally, when you ask a child what he wants for a
present, he will ask for a pony, being a child and not having any
sense of what is practical. By extension "asking for/promising a pony"
refers to naive and unrealistic demands: "Everything you asked for, no
matter what that might be, and more."

Hence: Congressman X promised peace, prosperity, national greatness,
and a pony.
