I accidentally discovered the Paste Previous Clipboard option today.
When used, it moves the contents of your clipboard back a step, which
is really helpful, but unfortunately there's no counter.

I ended up loosing a ton of text that I had copied from results of a
"process lines containing" operation (I was able to revert the
document and run the op again...).

It seems to me that pasting the previous clipboard should do just
that, and not overwrite the current clipboard.

Can we get a corresponding menu item to "Paste from Next Clipboard" or
something? Or better yet, a method to move back and forward through
the available clipboards in BBEdit?

BTW, the Paste Previous Clipboard default keystroke is Shift + Command
+ V

Well, I suppose my feature request is already there... if you hold
down the keystroke the value appears in place, allowing you to preview
what you'll paste. If you hit the v key again it'll go to the previous
to the current until it wraps around.

Seems as though it's limited to the six most recent clipboard items...

Any official word on how this feature works?

The official word on how the feature works is in the manual :-).

From (printed) page 51:

Holding down the Shift key changes the Paste command to Paste Previous
Clipboard, or you can use the key equivalent Command-Shift-V. This
command, enabled whenever the last operation was a paste and the
previous clipboard is non-empty, replaces the pasted text with the
contents of the previous clipboard. The previous clipboard becomes
current and will be used for any further paste operations; repeated
applications of the command cycle backward through the available
clipboards.

There are six clipboards. You can inspect them by choosing "Show
Clipboard" from the Edit menu and cycling through the clipboards.
There are also Next/Previous Clipboard commands on the Edit menu to
cycle through them without opening the clipboard window.

Yes, it's documented in the manual.

Look further down the Edit menu. There are Next Clipboard,
Previous Clipboard, and Show Clipboard commands. :-)
