Override the default protobuf version used by Bazel

Hi.

How do I override the default version for protoc / protobuf runtime included with Bazel? By default, it compiles and uses an old (23.x) version, but I'd like to make it use the latest (28.2) version. Are there any documentation / code samples for this? 

I'm using Bazel 7.3.2.
