Here is a good article to share. I know that traditional Chinese medicine has a lot of good values for our health. I have cooked spinach, watercress, arugula, and bitter melon but never knew they all belong in the bitter foods. They all taste very good when you know how to cook them properly.
I remember when my family was living in Chicago and my husband's parents came to live with us, what happened to me at that time. I think I included that part in my book Matched For Eternity, although not in details. It was a bitter-sweet story.
I was working full time at that time, but my husband wanted me to cook when I came home. He told me to call home around 3 in the afternoon and told his mother how to cut meat & vegetables for me to cook. However, his mother was not good in cooking and sometimes could not understand me; it ended up that I still had to do everything in cooking.
My husband told me ahead of times his father didn't like vegetables, especially bitter melon. Well, it turned out my father-in-law ate everything I cooked, even the bitter melon !!!
It shows knowing how to cook properly is very important.
