A server power supply outputs a standard power output method.
If the supplies are typical ATX-style connections, then you can build/buy a power supply board that lets you power up the supply (RAMPS can even control the power on these with the right sub-board). If it’s not a standard ATX connection, if you know the model of the server(s) that supermicro sells that would normally use those supplies, then you can just grab the tech sheet of supermicro’s website for the server, and find the power input connection details there. They provide fairly decent specs for that stuff.

You can also go the Printrbot route and short the atx on pins.
