Now, we can add the remaining hummus ingredients. I like adding the chickpeas in two batches, processing the first batch for a minute before adding the rest. Then, I stand back and let my food processor run.

When it looks close to done, I add a splash of cold water while the processor is still running. After a few tablespoons of water, the mixture transforms into fluffy, creamy, whipped hummus.

2Add the olive oil, minced garlic, cumin, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl, and then process for another 30 seconds or until well blended.

3Add half of the chickpeas to the food processor and process for 1 minute. Scrape the sides and bottom of the bowl, then add the remaining chickpeas and process them until thick and relatively smooth, 1 to 2 minutes.

4The hummus will likely be too thick and still have tiny bits of chickpea. To fix this, slowly add 2 to 3 tablespoons of cold water or aquafaba with the food processor turned on until you reach the perfect consistency.

Wow! This is a great recipe. Super easy and delicious. I had to make a substitution because I realized I didnt have any tahini on hand so I used sunflower butter and it still came out great. Thanks for sharing this. It will definitely be on replay to make again in my house.

One additional step I like is to press any excess moisture from the rice by transferring the cauliflower rice to a large paper towel or absorbent dish towel and squeeze/press to remove any remaining water. This ensures no excess moisture remains, which can make your dish soggy.

Two ways for long-term freezer storage, first get all the water out of the vegetable rice it with method of choice, dry it again on either paper towels or a fine mesh strainer so it is as dry as possible, I usually air dry in a large fine mesh strainer for an hour or so while mixing every 15 minutes.

I fill pint or quart size sous vide bags with cauliflower rice and other riced vegetables then hand pump the air out, I prefer a hand pump because any moisture that gets into the electric or battery ones will ruin it ASAP! Liquid from a box store rotisserie chicken killed my battery vacuum so I only use manual now.

Cauliflower rice has saved me from pre-Diabetes. And not eating corn or carrots. Boiled sweet potatoes has 9,406 mcg of beta carotene it topples carrots. Makes a great alternative to those items I cannot have. First I steam my Cauliflower rice only 3-4 minutes then I stir fry in with onions oh, so very teriyaki sauce bellpeppers green and red and chunks of bamboo shoots and tofu or chicken. Sweet potatoes are excellent boiled then baked for a crispy outer texture!

Thank you for this information. Rather than going out to buy cauliflower rice, this is so much better. Especially since I have a head of cauliflower in my fridge waiting to be used, and happen to have a box grater too. Never too late to learn how to cook unprocessed food!!

Was very excited trying doing this instead of regular rice.
I modified it of course: started as a regular risotto thing, fried shallots and garlic, wine, then cauliflower. Fried it nicely, added beef stock and served it with good old cheddar cheese (it was a side for sous vide rabbit)

I took white mushrooms, a few slices of yellow onion and sauted them until fragrant.. Added riced cauliflower and cooked together for about 7 minutes, all on medium heat. Sometimes I add a pinch of chicken bullion. Nice combo.

Wait! Cauli and beets and carrots rice?!? just the sound 9f that makes me SO HAPPY!!! I dont have a grater blade for my food processor. Got a Cuisinart processor at Goodwill with just reg chopping blade. Can you make do by simply pulsing the chop blade till crumbled and not puree? That combo sounds delicious! What is your variety of veg blend ratio?

Absolutely yes! That is what I have been doing for a few years. Be careful to not pulse for too long, remove pieces that are to too large, and add to next batch. Do not try to do too large a quantity at a time.

I made this, it turned out really good, however I noticed that were a few little very fine, thin, stem like pieces here and there. Has anyone else noticed this? How can I keep this from happening? I washed the cauliflower, chopped it into smaller pieces before putting it the food processor. Thank you!
