I love "new to me" recipes. I'd seen a post about the famous Hello Fresh Meatballs and they looked so delicious I decided to recreate them on my own. These spicy meatballs are so easy to make and can be served in so many ways! I love them with large pieces of lettuce for lettuce wraps, wrapped in pita bread for a quick sandwich, or tossed with rice and veggies. They even make a great appetizer if you're looking for something a little different to serve on game day!

Firecracker meatballs also go great with Pita Bread and a salad or try adding them to some easy Asian noodles for a quick meal. I love them in a lettuce wrap for a low-carb option. You could even create a firecracker meatball bowl, by serving them with some jasmine rice (or cauliflower rice!) and other veggies and flavors. There are lots of choices here!

Of course, you can also always serve these meatballs as an appetizer. To do this, refrain from adding the firecracker sauce to the meatballs and just serve it on the side as a dip. This makes an easy and delicious appetizer!

Firecracker Meatballs are my version of the hello fresh recipe that has become super popular! The meatballs are Asian flavor inspired with a kick then tossed into an addicting creamy sauce. This recipe includes BOTH oven and air fryer instructions because I love them so much either way!

With a bowl or your hands mix meat and other ingredients together REALLY well. You want to make sure the spices, onion, and ginger are distributed properly. I have a standard rule when it comes to mashing meat together. Counting to 45 and that seems to be the magic number for me so that the meat mixture is mixed together perfectly.

There are two reasons I try to make my meatballs each about the same size. They all cook evenly and for exact nutrition reasons. When each meatball is the exact same size- it will have the same nutrition/calories/ww points.

As an appetizer, Serve them piled on a small platter, stick each meatball with a toothpick, and have a big bowl of the firecracker sauce on the side. This would be perfect for football season and the holiday parties coming.


I made these with extra ground beef (its what I had!) and these came out delicious! I kept the recipe bc it will be one I will use on a monthly rotation. I did make extra sauce-my husband uses it with everything!

NARRATOR: In the year 2000 people all over the world usheredin the millennium with the magic of fireworks. A television audience of4,000,000,000 around the globe watched as the Eiffel Tower was transformedinto a gigantic Roman candle.

Fireworks are one of our most enduring customs, and have moved us for centuries. Each dazzling display depends on a simpletechnology, a black powder known as gunpowder, an explosive mixture that shootsfireworks into the air and propels bullets from guns.

It was the Chinese who first discovered gunpowder over 1000 years ago. Soonthey developed simple pyrotechnics, like firecrackers, which they believed hadthe power to scare away evil spirits. Marco Polo said these devices made such adreadful noise that anyone not used to it could easily go into a swoon and evendie.

The most important ingredient in gunpowder is the compound potassiumnitrate, more commonly known as 'saltpeter.' These naturally-occurringcrystals are not explosive on their own, but require the presence of afuel, like charcoal, to produce a flammable mix.

Ancient alchemists refined the recipe to 75 percent potassium nitrate, 15percent charcoal and 10 percent sulfur. The ingredients become explosive afterthey're ground together. This highly volatile black powder gave birth to thescience of pyrotechnics and the incredible fireworks we experiencetoday.

TOM SMITH (Pyrotechnic Consultant): Black powder is a mixture ofthree components, potassium nitrate, sulfur and charcoal. If you mix themtogether you end up with a powder in which you can still see the white, yellowand black flecks. Now if we burn that, what happens is it burns relativelyslowly.

This is really quite useful for the basis of a lot of firework compositionswhere you want something to burn slowly enough that you can see it in the air.If it burnt too quickly it would all be over and it would be a pointlessfirework. So lots of sparks being produced slow, burning lots of gas, lots ofsmoke.

And if you take that same chemical composition but you grind the potassiumnitrate and the charcoal together, add the sulfur, grind it over many hours,press it into cakes, break it up, you end up with a powder the consistency ofcoarse granulated sugar.

Now when we burn that, the fire can travel both through the grains and betweenthe grains and the whole reaction is very much more quick. This sort of thingis used for making the lifting charges of fireworks, where you want lots of gasin a short space of time.

NARRATOR: This same black powder can be compressed intomarble-sized balls, called stars. They're used in many of the shells inlarge-scale displays like Boston's 4th of July celebration. Each star-filledshell is ignited by an electronic match inserted into the lifting charge in itsbase.

STEVE PELKEY: This is a typical chrysanthemum shell that will be firedduring the program. At the base of the shell is a black-powdered lift charge.Once that is ignited, it will propel the shell approximately five or sixhundred feet into the air. Then there's a secondary burst that takes placewithin the ball shell. It will then ignite several hundred small marble-sizedstars that will determine the shape, which will be round in symmetry becausethis is a round shell.

Boston's 4th of July celebration is one of the oldest in the nation. It'srenowned for the splendor of its music and fireworks show, which draws a hugecrowd to the banks of the Charles River. Many come to the same spot year afteryear, some even camping out overnight to make sure of a good view. By the endof the day, the crowd will total nearly half a million.

STEVE PELKEY: We have approximately three and a half tons of devicesthat are on this barge right now. They are located in approximately 5700mortars thatwill have individual firing commands. Most of our shells are packed in sandand racks that are very precision laid out.

NARRATOR: Pelkey's team spends an entire week wiring up theseshells to a computer that is programmed to fire them electronically. It'sdelicate and risky work. High humidity can make gunpowder useless. Lightning ora stray spark of static electricity can set off one firework or dozens at atime. Anything can happen and Pelkey must always be prepared.

You're dealing with the state police. You're dealing with waterwayconditions. All of these agencies need to be notified and kept abreastof everything that is going on. We're just going to fire from the outside fortonight's display.

NARRATOR: The evening begins as fireworks and live music are combined inone of the most popular pieces adopted by the Boston Pops and orchestras acrossthe nation, Tchaikovsky's 1812 Overture.

Ironically, the 1812 was written to celebrate the defeat of Napoleon byRussia and has no connection with American Independence. But audiences don'tseem to mind as they relish the combination of fireworks, cannon and churchbells.

KEITH LOCKHART (Conductor, The Boston Pops): Well, you canimagine when you put together powerful gunpowder devices and music, it can be alittle bit dangerous. I've had occasions where we've done the 1812 or asimilar piece in places where they're not so used to doing it, and a group ofArmy National Guardsmen have come up and been a little over-eager and have pointed the cannon right at us. And even with blanks in them, the impactand sound set the entire orchestra diving off of their chairs andcovering their heads. It can be kind of exciting.

NARRATOR: The Zambellis, an Italian-American firework dynastyfounded in 1893 when old man Antonio swapped Naples for Newcastle. The firm hefounded, Zambelli Internationale, is one of the oldest and largest fireworkcompanies in America.

GEORGE ZAMBELLI, SR. (Zambelli Internationale): They call me Mr.Fireworks, yes, because of...hey I've been at it a long time. I devoted my lifeto fireworks. I've done nothing else. I wanted to be the best and wanted to bethe biggest and this is it.

GEORGE ZAMBELLI, SR.: They're magic and everybody loves to be part ofmagic. When you see them 'ooh' and 'aah' and then stamping their feet atstadiums and so forth, it makes you feel as though you're accomplishing a greatdeal.

NARRATOR: When George's father boarded the boat in the oldcountry he brought some Italian magic with him, his secret firework recipes,ancient alchemy refined over generations and passed in code from father to son.To ensure these secrets were never lost, Antonio transcribed them into thisslim volume before he died. This little black book locked in the Zambelli safe,is the foundation of their empire.
