Profiling backup job

I have a strange behaviour backing up some clients. Sometime it is quick, sometime it take three hour to finish some kilobytes.

How can I analyse where the most time spent to drill down the problem ?

I would start the job with debug set to 250 (or maybe 500) on client and storage ...
