Any suggestions? We'll need to warn the restaurant about the approximate number and then confirm the number the night before, I expect.

Should we do a greek buffet? Sandwiches? A catered affair (let the caterers decide)?

I’m a big fan of sandwiches, mainly because they are easy. But catering would be nice, as would a gigantic bbq ;)

If you go the BBQ route, I recommend http://www.emergencybbq.com/.  Arrington uses them for his parties and I have used them also.  They are priced right and their quality is high.  if you go this route, make sure that their are plenty of tasty options for vegetarians.
