In Japan, an ornamental version of yuzu called hana yuzu (花柚子, 花ゆず) "flower yuzu" is also grown for its flowers rather than its fruit. A sweet variety of yuzu known as the yuko, only present in Japan, became severely endangered during the 1970s and 1980s; a major attempt has been made to revive this varietal in southern Japan.[6] Another variety of yuzu in Japan, with knobby skin, is called shishi yuzu (獅子柚子, literally "lion yuzu").[7]

Yuzu's domestic production is about 27,000 tons (2016).[8] Though rarely eaten as a fruit, yuzu is a common ingredient in Japanese cuisine, where the aromatic zest (outer rind) and the juice are used much in the same way that lemons are used in other cuisines.[9] The yuzu's flavor is tart and fragrant, closely resembling that of the grapefruit, with overtones of mandarin orange.[10]

It is used to make liquor (such as yuzukomachi, 柚子小町) and wine.[12][13] Slivered yuzu rind is used to garnish a savory, salty egg-pudding dish called chawanmushi, as well as miso soup.[14] It is often used along with sudachi and kabosu. Yuzu is used to make various sweets, including marmalade and cake. It is used extensively in the flavoring of many snack products, such as Doritos.[15][16][17]

Yuzu is also known for its characteristically strong aroma, and the oil from its skin is marketed as a fragrance. In Japan, bathing with yuzu on Tōji, the winter solstice, is a custom that dates to at least the early 18th century.[19][20] Whole yuzu fruits are floated in the hot water of the bath, sometimes enclosed in a cloth bag, releasing their aroma.[21] The fruit may also be cut in half, allowing the citrus juice to mingle with the bathwater. The yuzu bath, known commonly as yuzu yu (柚子湯), but also as yuzu buro (柚子風呂), is said to guard against colds, treat the roughness of skin, warm the body, and relax the mind.[20]

In the United States, the Department of Agriculture has a ban on the import of fresh yuzu (alongside most citrus plants) from abroad, including both the fruit and the trees.[24] This is intended to prevent the spread of contagious diseases amongst domestic crops.[23][25] However, following its introduction to California in 1888, yuzu is cultivated and available for sale in the United States.[23]

Actually I made this in November, the week before Thanksgiving on a peaceful Sunday afternoon where a friend and I made three of these pies. We juiced a lot of yuzu which yielded so much more juice than the ones from last year and waited forever for the crust to fully bake (it could have used more time, though) and I whisked a triple of the below filling until my shoulder and bicep ached but my stomach rumbled from the tart smell of citrus.

In a small saucepan, combine cornstarch, sugar and salt. Gradually add water, stirring until smooth. Bring to a boil over medium heat, stirring constantly. Boil for 1 minute and then remove from the heat. Quickly stir half of hot mixture into egg yolks, mixing well. Return to saucepan, continuing to blend well and return to boiling. Boil for another minute. Remove from heat. Stir in yuzu or lemon juice, yuzu or lemon peel and butter. Pour immediately into pie shell.

The general rule for a gin and tonic, at least in my house, is 2 parts tonic to 1 part gin (way more details than you need in the original G&T post). I added about 1 tablespoon of Yuzu Extract to the gin (Tanqueray) before diluting it with tonic. Since I did not have a fresh yuzu, I garnished with a thinly sliced lime wheel.

citrus flavor of yuzu paired with the spicy kick of jalapeno without having to import it yourself. This is a take on a traditional Japanese condiment called yuzukoshō, which is made from the peel of the yuzu fruit and green peppers, such as jalapeno. It may not seem spicy at first, but give it a moment and the heat of the jalapeno cuts through the bright, lemon-like flavor of yuzu, leaving you with a lot of flavor for very few calories.

Hello! I was so excited to read your post on yuzu! My mom and I are obsessed; whenever we are lucky enough to go back to Japan to visit her family, we are always looking for yuzu products to bring home to Seattle - usually bottled juice and freeze dried peel, but this last trip I found a jar of yuzu marmalade. Probably not as good as your homemade version, but better than nothing! When we're there, we use fresh yuzu whenever we can, since we know we won't see it again until the next winter trip. I've tried growing a couple of yuzu trees, but they are not so fond of the Pacific Northwest weather :). I'm going to keep trying - hopefully someday I'll have enough yuzu not just for cooking, but to have a yuzuburo at home on a chilly day! Thank you for your lovely blog!

I used blood oranges to make the champagne marmalade and added a little cointreau at the end. Wow!
Then I made the chocolate marmalade. Double wow! I have been adding a little cream to that and making chocolate marmalade sundaes. My friends can't get enough of this stuff!! If I ever get access to yuzu I will do it all again.

The difference comes down to whether you bought yuzu juice (or yuzu extract) vs. yuzu puree or yuzu marmalade. And it has everything to do with the sweetness. Yuzu juice is very tart and sour, so I recommend pairing it with a sweetener like honey. On the other hand, yuzu puree like this option from Monin is already sweetened or else concentrated enough to not need additional sweeteners.

Transfer the yuzu cream to a pastry bag fitted with a bismarck tip, and fill the doughnuts. Serve as soon as possible! (The doughnuts should be fine for an hour or two, but will be best when freshest.)

Very slowly whisk the heated yuzu juice into the egg mixture to temper it. Pour the mixture back into the saucepan, place on the stove over medium low heat, and cook, whisking constantly, until mixture thickens and becomes pudding-like. This should only take 5 minutes or so.

In a small bowl, rub the yuzu zest into the sugar. Cover with plastic wrap and refrigerate overnight. Optional: In the morning, transfer the mixture to a food processer and pulse a few times, until the zest is even more finely grated and distributed in the sugar.
