For AI image generation in the classroom, I like to use Padlet's "I Can't Draw" tool. 

For teaching how AI works, I second Teachable Machine. You can export your AI model to use in Scratch very easily using this site: 

Machine Learning For Kids is also still  interesting for creating AI-based Scratch projects
