Right page- I just can't seem to make out the name of the child.

Also, it appears that this couple is having another child (twin) 15 DAYS later.
Next page, bottom-left side, Jacinto. I've never encountered this before. Has anyone else?

It looks like Josefa to me.  Parents are Antonio de Frias and Joana Jacinta.

 

The other birth you question says Pai incognito and I think, Maria Jacinta.

No, you are reading it right. The parents and the grands are all the same. They state one baby born 30 April and the other born 15 May both in 1814.

So I Googled it (because poor Joana being in labor for 2 weeks did not sound right). Apparently, a woman can ovulate and become pregnant and then have a 2nd ovulation a couple weeks later which can result in a pregnancy as well. I've never heard of that. The article said it's rare, but not unheard of.

I think the baby is Josefa.

Thanks Cheri.  I didn't realize that there could such a large gap between the birth of twins until now. What an ordeal for that poor woman.
