as Chromebooks are connected to the internet, you can access any email account that has a web portal. Moreover, you can install Android applications on most of them so that you can run pretty much any email clients. Which part of it do you think they would struggle with? Also, you can use a Chromebook without a Google account. You can login as guest. but I would recommend creating a Google account if for no other purpose than to at least login to the Chromebook, and then they can access whatever email they want.
