Installing specific versions of AWX

I’ve done the install of Latest AWX onto Rancher enough to feel comfortable with it now. Yay. It’s clean and easy. But now I need to be able to control the versions of each image I install. I’ve worked out I can do this for awx-operator by intercepting the output of Kustomize and customizing it, but I should probably just be customizing in Kustomize. Are there docs for this next step? And it’s a whole next level to customize the /ansible/awx image and the awx-ee image, but I need to do both of those, too.
