My dad's coming down in a few weeks and I want him to make
some fried dough, like we used to eat when I was a kid when
we lived in Boston. For that I need some fatback (what we
called "salt pork" up there, but it's not the same as what
the rest of the world calls salt pork).

Does anyone know where to get it? I tried Fiesta, all they
had was real salt pork, which is no good because it's got
meat in it and will just shrivel up when you fry it, whereas
the fatback is supposed to be pretty much all fat.

My wife's a vegetarian, and I'm not exactly used to buying
meat products outside of restaurants, so I don't know how
common or uncommon this stuff is.

Any help appreciated.

You might try central market.

I've gotten fatback at HEB before, but I don't know if
it's a regular item there or not. <scratching head>
I'm wondering if a regular butcher might have some on hand;
you might want to call around (isn't there still a
butcher shop on S. Congress?).

There is an oriental market on Lamar south of 183. Ma Thai I think. The name
may be incorrect. It is on the east side of Lamar in a small strip center.
They have fresh bacon with the fat back attached it makes great cracklins.
This may be what you want. It is really great. It is not smoked bacon.
