A very Happy New Year to you and your loved ones. This year we are
going to bring you more mouth watering recipes and the age old recipe
secrets that make them so delicious. We will be featuring reader's
contributions and great surprises over the year. The monthly Recipe
contest has proved to be very popular. We will continue to run it
every month.

Hurry and send in your recipes for this month's contest. Winners of
the December 2000 contest will be announced in the next issue. Those
of you who have not sent in your entries, do remember to send them in
as early as possible. The closing date is approaching soon. And do
keep sending us your delicious recipes and feedback to make this
newsletter useful for all of us.

great tasting dishes in your microwave. That's because this issue is

Recipe Secrets

Here we have included some of our tips and secrets to make microwave
cooking easier and the food taste better.


Tip 1: Cookware for microwave cooking

You will find that most of the cookware you have are microwave
safe. But to be absolutely sure, stand the dish in the oven with a
glass of water next to it. Cook on HIGH for 1 minute. If the dish
remains cold, it is fine to use in a microwave oven. If it gets hot
(like the water), then don't use that dish. Metal is not suitable for
microwave cooking.

Tip 2: Standing time for microwave cooking.

Food continues to cook for a few minutes even after it has
been removed from the oven. Standing time varies according to the size
and the density of the food. If you are unsure about the cooking time,
then go for shorter period. Overcooking will ruin your food.

Tip 3: Cooking Chicken in the microwave.

When cooking food with one end thicker than the other (like
chicken drumsticks), place the thinner end towards the center and
thicker end towards the outer side of the dish. The food will cook
more evenly when arranged in this manner.

Tip 4: Use of straw, wicker and wood in microwave cooking.

They may be used for short periods of time, to warm rolls and
bread. Large wooden utensils such as bowls should not be used for
prolonged heating as the microwave energy may cause the wood to become
brittle and dry.

Tip 5: Temperature of the food for microwave.

Food at room temperature takes less time to cook and heat up
than refrigerator frozen food.

Tip 6: Testing for results.

Cakes are done when a wooden stick comes out clean and cake
pulls away from the side of the pan.

Tip 7: Cake does not come out of the pan.

Once you have taken out the cake from the oven, let it cool .
Now turn the pan, if the cake does not come out then heat it a little
on the fire, then turn the pan. The cake will come out without
breaking.

Vegetable Curry:

This recipe is easy to make and is ready within 30 minutes. You can
add whatever vegetables you want in this and depending on your taste
you can make it more spicier.


Ingredients:

1 tablespoon peanut oil
2 medium onion chopped
2 tablespoon mild curry powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
400g canned tomatoes
1 tablespoon ground coriander
300g cauliflower chopped
300g broccoli1 chopped
1 medium carrot, sliced
2 tablespoon mild curry powder
100g peas
1 tablespoon lemon juice
1/2 cup vegetable stock or water
1 tablespoon plain flour
1/2 cup roasted cashews.


Method of Preparation:

1. Combine oil, onion and spices in large microwave safe bowl and cook
on HIGH uncovered for 4-5 minutes, stirring once in between.

2. Add undrained crushed tomatoes and cauliflower. Mix and cook them
on HIGH, covered for 3 min.

3. Put the remaining vegetables and stock, cover and cook on High for
approximately 8 min stirring twice during cooking.

4. Stir in the blended flour and water and mix it and cover and cook
on High for about 5 min or until the vegetables are tender.

5. Add lemon juice and nuts. Stir and serve.

Curry Chicken:

Here's a recipe for curry chicken which can be enjoyed with rice or
noodles. This dish can be made instantly without much supervision. You
can use whatever part of chicken, but remember to adjust the time
according to it because overcooking will spoil the dish.


Ingredients:
500 g chicken pieces
1/4 cup coconut milk
1/4 cup water
1 teaspoon salt

List A:3 cm cinnamon stick
30 g lemon grass (crushed)
1/2 tbsp curry powder
1/2 tbsp chili powder
3-4 cloves of garlic
1 inch long ginger (crushed)
3 tbsp oil

Method of Preparation:
1. Combine ingredients A (given above) and fry in a casserole on HIGH,
uncovered for 6 minutes stirring once while cooking.
2. Add water, salt and chicken pieces.
3. Cover and cook on HIGH for 5-6 minutes.
4. Stir in the coconut milk and cook uncovered on HIGH for 2 more
minutes.
5. Garnish with fresh coriander leaves. It's ready to serve.

I am Janani. I am going to share this delicious fruit cake which I
prepared for my mums birthday. She enjoyed it and that was her best

Ingredients:
1/4 tbsp baking powder
140 grams maida
250 grams dried nuts (soaked in water for 1 night)
100 grams butter
2 eggs
2 tbsp caramel
100 grams sugar
1/2 tbsp vanilla essence
1 pinch salt
1/2 tbsp lemon rind

Method of Preparation:

1. Beat eggs, butter & vanilla essence until fluffy and add maida
2. Next add sugar, salt, baking powder, lemon rind and lemon juice and
mix well.
3. Finally add the dried nuts & milk
4. In a greased tray pour the mixture and bake 350*C till done
5. Pour the caramel on top and serve chilled.
