Asked them what bands they used, they said Tel$tra 3G for calls, 4G for
data.

So presumably reception issues with them as well?

Their 3G definately works for data as well - I've been using two
ALDI Mobile SIMs in 3G mobile broadband modems over the last year.
Never tried in any 4G-capable hardware, but I don't doubt it works.

Not to do with whatever nonsense the person you talked to said
about 3G and 4G, but they don't use the entire Telstra network
so apparantly there are ALDI black-spots out there that would
still work with a real Telstra SIM.

Compared to Optus they've still got far better coverage though.
It doesn't seem to be very crippled at all in rural Vic.

It's probably crippled (no coverage) in smaller towns in outback
areas.

Not the same thing, but on our 2019 (:-() trip, we used Woolworths
Mobile - who also are using part of the Telstra network - (for data) and
this is part of our experience (before we gave up on them and used only
real Telstra):

NSW: OK in Broken Hill. No coverage in Tibooburra.

QLD:
No coverage in Thargomindah, Quilpy, Aughatella, Tambo and Blackall.
OK in Charleville and Longreach.

So OK in somewhat bigger towns, no coverage in small(er) towns.

Presumably however Tel$tra, using a Tel$tra SIM, would have coverage?

Tried to change to Aldi from Vodagroan, after troubles with the Aldi
site, Voda refused the transfer (although I am on a monthly plan, might
be something wrong with the account as I see Voda have me down with a
number that is not the one I am using, weird).

Aldi said (in email) to call them & we will fix. Called
them, waited 25 minutes, then a Philippines call centre came on, the
lady spoke so fast with such a strong accent, impossible to understand.
except the part where she said to call Voda. No thanks, had enough.

Gave up, now trying Woolworth$. Report, if interesting, to follow.

Yes, sorry about not mentioning that. We had two SIMs (actually two
phones with one SIM each): The (prepaid) Woolworths Mobile one and a
real (prepaid) Telstra one. (We tried the prepaid Woolworths Mobile SIM,
because its data was cheaper than that of prepaid Telstra.)

Our experience has always been, if a place - any place - has coverage
at all, the coverage always includes real-Telstra and *may* include
others. So we always go for real-Telstra [1].

My current phone is dual-SIM, so when/if we're ever allowed back in
:-(, we're all set! (Now we have to settle for Austria, if *that* is at
all possible (The Netherlands is now a high risk area).)

[1] We had enough of the frustrating situations where you see someone
happily chatting on hir phone and you don't have any signal! Life's too
short for that kind of nonsense.
