Before you buy.
I've seen by your other posts that you're coming to Devonport prior to doing
the Overland Track.
Others have already told you that Devonport is pretty mournful. A couple of
days in D'port would drive me crazy. Launceston is a much nicer city to
spend a couple of days getting ready for your walk. Lovely parks, historic
buildings, decent restaurants, that sort of thing. An hour by road/bus from
Devonport. Anyway, you want a couple of decent outdoor shops. Both Devonport
and Launceston have a Mountain Designs:

Launceston also has a Paddy Pallin:

Both of these organisations are world class, and would probably be most
useful for your plans, as you can examine their products when you get here.
Both are well stocked and busy at that time of year. Both will also provide
maps/fuel for your walk. You could browse the web sites, then pick up
whatever you need when you get here.
In Devonport there is also Backpackers Barn. Launceston also has Allgoods.
Both L'ton and D'port have regular buses scheduled to Cradle Mt., for the
start of your walk. I can't comment on accommodation, because I live here,
therefore don't use any. But there are plenty of B&B's and hostels, etc.
Given the relative strength of our currencies, everywhere will be cheap for
you. I think others have already provided some leads. This accommodation

After your walk, head down to Hobart to check out the yachts after the
Sydney to Hobart yacht race. Between about 28/December and 10 January
Hobart's waterfront is about as close as Tassie gets to being "abuzz".
Food/wine festivals, bands, street entertainment, that sort of thing. Worth
a look.

website where you can order goods on-line.
It is only new but is slowly getting the stock onto the site.
The order form is an insecure email form for the paranoid out there.
The site looks like developing into quite a useful one but, at the moment
it's a bit light on.

You'll note that nobody stepped forward to defend Devonport, though.
Also, I recommended spending time in Hobart, so I'm not too parochial.
Seriously, for an international traveller with limited time, I think L'ton
or Hobart are the best entry options, and if the trip is centred around the
O/T, then into one and out the other is ideal. Agreed?
Can you imagine spending 2 days in Devonport?
