piezo chips for input

Hello:

I just put together an Auduino and it's great. Unfortunately for me,
I don't understand it (or the Arduino) very well. I have a project in
mind that would use voltages from piezo chips to produce tones or MIDI
signals. Would it be possible to use piezo chips, with protection for
voltage spikes, as the inputs for the Auduino?

Any thoughts would be much appreciated.

Thanks. But I was thinking about the possibility of the Audino
producing tones or a MIDI signals that somehow corresponded and
changed with the changing voltages produced as pressure was applied to
the piezo. Would that be possible? Maybe these drum machines
translate the changing voltages of the piezo into MIDI velocity?
