So, when you download and install evaluation copy of windows server media, it will be working 180 days and after that, it will shutdown hourly. But the state will differ if you download and install the main media (non-evaluation copy) of windows server and not activate it at all. Me too don't know what happens if a main copy of windows server is not activated.

For Windows Server 2016 Standard, you can convert the system to Windows Server 2016 Datacenter as follows: From an elevated command prompt, determine the current edition name with the command DISM /online /Get-CurrentEdition.
