I mean a plugin for a packet sniffer, so that i can trace down problems with unistim on my network.  I want to verify what is coming out ofthe phones.  I saw someone mention something in the past for Ethereal, but I cant find it.

There're were a few requests for a UNISTIM dissector for Ethereal, but
there wasn't any follow up. You can use Cedric Han's chan_unistim as a
reference. Cedric has reversed engineered quite a lot of the UNISTIM
protocol. His code is still missing a few things, wrt the newer
phone/Succession. I've been working on adding support for newer devices
to chan_unistim. Also, I have written a simple standalone dissector
(requires MS .NET) for my own testing. Contact me off list if you wish
to have a copy.
