I am a Chinese-Filipino who would want to share a simple recipe called "Beef with Broccoli". So here it goes...
INGREDIENTS:
Beef: 400g to 500g lean beef cut into squares
Marinade Mixture:
1 egg
1/2 teaspoon table salt
1/3 teaspoon of black pepper powder
1 bottle-cap-capacity of cooking wine
1/8 to 1/4 cup of water
3/4 to 1 kilo of broccoli, flowerets removed and sliced diagonally.
3 tablespoons of oyster sauce
2 1/2 tablespoons of light soy sauce
1 tablespoon of dark soy sauce
2 tablespoons of sugar
1/2 to 1 teaspoon of sesame oil
4-5 cloves pounded asian garlic
1/3 to 1/2 cup natural or artificially prepared beef broth or stock
2 tablespoons of cornstarch powder if the egg thickener won't be sufficient.
Cooking Directions:
The beef and mixture: Cut the lean beef into squares and at the same time, mix the marinade ingredients together. When the beef cuts are ready, pour the marinade mixture on the beef cuts then mix well. Marinate for 20 minutes. After, add 1 1/2 tablespoons of corn oil to the beef and marinade mixture. Mix thoroughly then leave again for another 20 minutes. Finally, it's ready for cooking ...
The vegetable:
Remove the flowerets of the broccoli then cut it diagonally into thin slices.
Cooking in the Wok:
The meat: Heat the wok and add 1 cup of cooking oil. When the oil is ready, separate the beef from the marinade and put the beef cuts into the wok then stir-fry until the beef is nearly cooked. After, set aside the beef on a plate.
The vegetable: Add 1 and 1/2 cup water to the wok. Bring the water to a boil and add the broccoli. Cover until the broccoli is cooked. Drain the wok.
Stir-frying and Simmering in the Wok:
Heat the empty wok once again then add around 2 tablespoons of cooking oil. Pre-heat the oil. Pound another 2 cloves of garlic for sauteing purpose... Drop the newly-crushed garlic cloves into the wok with oil then stir-fry...
After stir-frying for 1 minute, drop the cooked beef cuts and vegetables into the stir-fried garlic. Mix well and stir-fry.
Then later, pour the beef marinade. Boil and add some cornstarch and water mixture to thicken if desired.
Bring into a simmer. Serve hot!
