Hi everyone.

Our next Ashland Bike Club ride will be held Saturday, May 16 at 11:00 a.m.  The ride will start from the Claypit Hill School in Wayland.

The Weather
The forecast for Saturday is calling for a sunny, warmer day with temps starting around 68 and climbing up to around 74 before the ride ends. It might be good to join this ride because next week’s forecast, which could still change, is not looking very good. Temps on Tuesday could reach 93 degrees and Wednesday, at least for now, look like rain.

We are now in the time of year when the sun’s rays are at their strongest, and ABC rides take place just before and after noon when the sun’s rays are their most direct.

It’s really important to apply sunscreen to all exposed skin areas before you ride!! A word to the wise …

The Ride
Saturday’s route, although it uses many familiar roads, is a fairly new route for the club.  Most of the ride is really easy (i.e., flat) but there are definitely one or two pretty tough hills.

We’re excited about this route because it does a great job incorporating the Mass Central Rail Trail both on the way out and also on the way back.  In between, we’ll ride through some beautiful areas in both Wayland and Weston.

Overall, the route offers fantastic scenery and a chance to explore some roads the club doesn’t use very often.

Note that parking can sometimes be tight at the school but we’ve always found sufficient space for our riders.

CC Rider
One of ABC’s riders, CC Conway, is vacationing in studying really hard while attending college in Estonia.

CC has a new venture that we want to tell you about.  She has recently been editing a “substack” for a woman named Fiona who has a disability and has benefitted greatly from CC’s support.

CC states that Fiona’s writings are filled with humorous anecdotes and other creative work from her time living in Greece.

Having read several of the articles already, I can assure you that Fiona is an amusing and colorful observer of life.

ABC’s Hot & Sour Soup Recipe
It’s really easy, really good, and definitely a meal in itself!
INGREDIENTS
6 cups vegetable broth (I use
this)
1 cup shiitake mushrooms (or any), sliced
1 can bamboo shoots
1 can water chestnuts
4 oz (or more) firm tofu, cubed
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tsp chili paste or 1 tsp sriracha (adjust to taste)
1 tsp ginger powder
2 cloves (I use about 5) garlic, minced
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
1 teaspoon toasted sesame oil
1/2 tsp black pepper
chopped green onions and cilantro for garnish (optional)

DIRECTIONS
In a large pot, bring the vegetable broth to a simmer.
Add the shiitake mushrooms, bamboo shoots, tofu, ginger, and garlic.
Let it cook for about 5 to 7 minutes until the mushrooms are tender.
Stir in the soy sauce, rice vinegar, chili paste, black pepper, and sesame oil.
Slowly add the cornstarch mixture while stirring continuously, and let it cook for another 3 to 4 minutes until the soup thickens.

Taste and adjust seasoning as needed.

Garnish with chopped green onions and cilantro before serving
