Potato Salad - Second Post
I am resending this email since the first one did not transmit correctly. Hopefully this one will. V

Once in a while I will share a recipe with you. I was a caterer for many years so cooking is second nature to me and I have often thought it is embedded in my German genes. I don't cook much these days since my husband and I just do notneed a lot of food and our children and grandchildren are far away. Todays recipe is a favorite. You will see that posting it led me to some information that I had not known and the realization that there are a lot of other cooks who relied on good 'ole Hellman's for the extra special ingredient so important to their favorite recipes.I love potato salad - just about any kind - except the kind that comes in little cardboard or plastic containers! I agree with the person who said that prepackaged potato salad tastes just like the container it is packed in.The recipe below is a lot like the one I make. I will admit that I am a creative cook so my recipes have many versions. I believe that if you start with this recipe you can add just about anything - well anything that you would expect to find in potato salad - and it will still be great.The only ingredient that I am adament about is Hellman's Mayonaise. Period - no discussion.Well, imagine my surpirse when I came upon the following information while surfing for Hellman's recipes. "Hellmann's has changed their mayonnaise! " Yes, we have changed the formula of Hellmann's Real Mayonnaise" reports Hellmann's owner Unilever" (click on the green line above to see for yourself.)I then read about an acceptable (as described by several ladies who cook in the Southern Tradition) substitute, Duke's Mayonaise. I visited their site http://www.dukesmayo.com/ and was so happy to find out that Dukes is available here:Price Cutter Food Warehouse 380 Harkrider,Conway, AR 72032 Phone: 501-327-3043 and here - Harps Food Stores, 1048 Main Street, Vilonia, AR 72173 Phone: 501-796-3723I will be checking them out the first of the week. I will report back if they do have Duke's in stock.In the meantime I recommend that you hang on to this recipe till I find Dukes Mayonaise. ;>))

A Southern Ladies Best Potato Salad

3 lbs potatoes, boiled in salted water, peeled or unpeeled, cubed

1 cup Hellman's Real Mayonaise - no low fat please!

3 hard boiled eggs, sliced

1 stalk celery, chopped

1/2 small onion choped,Vidalia's are best

sprinkle of fresh parsley

salt and pepper to taste

Mix all ingredients, chill.
