masking address to relay

Hello.

How can I make an address "addr...@originaldomain.com" to be sent as "addr...@newdomain.com" when relay?

Use Forward. Go to Users, select your user addr...@originaldomain.com and specify forward address addr...@newdomain.com

The situation is that my server receives an email with a From and I have to relay that same email but changing the From.

It is not an email addressed to a user on my server.

I don't see how to use the forward in this case.

May you explain a little more?

I am afraid, you cannot do that.

You can not alter message headers. It would break DKIM signatures, and receiving servers will not like that.
