You absolutely can! I've done it once or twice myself, and I believe I've heard others doing so in the past.

Whatever platform you use, keep in mind that there's two main "configurations" of online-ness: The first is when the whole group needs to meet at the beginning to (1) discuss "the rules" and understand the timing and such, and (2) present their results to the group as a whole. The other is during the "team breakouts" where each group goes off into their own space and discusses the CFP/requirements among themselves. I managed to make this work with Teams by having everybody in the Teams call together for the "whole room" segments, then assigned them to "breakout rooms" in Teams for the team discussions. If they had a question, they could either DM me (the facilitator) or come into the "main room" where I was hanging out with the organizer. Worked quite well.

I'm assuming a similar approach could be done using Zoom or other online meeting tools, but I have no direct experience with those.

As for drawing/sketching materials. we had some limited success with Miro. I haven't found an online group collaborative tool I really liked, but people keep exploring with different tools, and the ability to screen-share coupled with the ability to file-share offers some non-real-time options that might work as well. Just as only one person can reasonably be drawing at the whiteboard at a time, creating a Dropbox group that shares a cloud-hosted Figma or PowerPoint and uses word-of-mouth synchronization and screen-sharing during authoring could get you some distance.
