The entire process starts with choosing the best mussels available if
you are buying them from a market. Avoid any mussels with shells that
are chipped or at all damaged, and be sure that they are tightly
closed. The mussels should be allowed to breathe in order to avoid
having them die before being cooked, thereby compromising the meat.
The next step in how to clean mussels is soaking them in fresh water
for twenty minutes right before cooking them. The mussels breathe and
filter the water, pushing the sand out of their shells. The soaking
process will allow the mussels to rid themselves of the majority of
the sand and salt they have inside their shells.
The majority of mussels possess a fibrous growth known as "The Beard",
which can be removed by grabbing it with a dry towel and quickly
pulling it off. This method prevents you from killing the mussel while
removing the growth. The following portion of how to clean mussels
involves removing the mussels from the water, making sure not to
disturb the sand that settles on the bottom of the pot. Move the
mussels into a separate bowl with fresh, clean, cold, water. Allow the
mussels to soak for a little longer, then remove them from the bowl
individually and scrub them with a firm brush.
The brush will help you remove any lingering sand or barnacles that
have remain attached to the shell. Place them under cool tap water for
a final rinse and place them to the side, drying them with a towel
before you begin cooking. With that final act you have successfully
learned how to clean mussels. Luckily cooking this tasty shellfish is
almost as easy as cleaning it. Most of the work in cleaning them is
done by the mussels while they are in the bowls of water. In pumping
the water through their shells they are removing the grit and grime
inside before you start cooking them. With a little bit of patience
and some bowls of water you will have some fresh, clean mussels just
waiting to be prepared into a delicious meal.
