Basic questions on how to zoom and pan

Hi,  I installed APV PDF Viewer on Android 4.4.4 and can't figure out how zoom and pan work.   I'm new to modern Android (my old phone ran 3.1), so I might be lacking some basic knowledge.

When I view a PDF I can pinch-zoom and position the text in the right place, but the instant I take my fingers off the screen, it snaps back to the original position with unreadably small type.   How do you make the image stay put in the position you put it?

I tried the "+" and "-" buttons which appear faded at the bottom, but their function seems unobvious (and so far unhelpful).   They seem to adjust the size of the "canvas" (my term), without changing the size of the characters.   Clicking "-" repeatedly shrinks the viewport to a rectangle in the middle of the screen with unused black space surrounding it (and less of the text visible thru the viewport, still in tiny size).  Clicking "+" acts like the viewport increases to be larger than the physical screen -- the text, still in the same small size, is shifted accordingly, eventually completely off-screen with nothing but white space visible.
