Ayurvedic Cooking by Kaushani Desai

Kaushani Desai – a senior Art of Living teacher – is in Dubai to share her cooking techniques for tasty and healthy food. She has taught the AOL Ayurvedic Cooking Course in 40 countries, mastering different cuisines Thai, Lebanese, Italian, Mexican and Indian. She is the author of “Sattva: Ayurvedic Cook Book” and is passionate about helping people transform their lives through food.

About Ayurveda and food:

Ayurveda is an ancient medicine system with a holistic approach to balance life energies. Ayur means life, veda means knowledge. Ayurveda offers a body of wisdom designed to help people stay vital while realizing their full human potential. Its goal is to maintain or heal the body, mind and the spirit as these are universally interconnected and integrated with the environment around us.

Nature is made up of five elements: air, water, fire, earth and ether. These elements dictate a unique body constitution for each one of us; called vata, pitta and kapha. Understanding one’s body constitution is equivalent to unlocking our personal code. This can be done with the help of an Ayurvedic doctor. Dr Mamta, proficient and experienced doctor, at the Art of Living Ayurveda Centre would be delighted to assist you in deciphering your body type.

Every food given by nature also possess these elements. Thus arises the importance of knowing not only the body but also the food we consume; which helps create a balance and stay healthy. Eating is an essential function for life sustenance giving us energy to grow and experience life; vice versa life experiences depend on what we eat. Ayurveda believes that a person can stay fit and free of disease by following the right diet.

Kaushani Desai studied food and nutrition in the year 2004, and during her practice as a nutritionist she felt there is more to explore. That is when she was prompted by her father to study Ayurveda. She started her research on the subject and underwent one year training. Her passion to cook food for her parents and see them relish it with joy and smiles, along with her Guru’s instructions, swayed a wave of inspiration; and spreading this knowledge became a way of life.

She has traveled almost 40 countries in last twelve years: Asia, Mid-East, Europe, and Africa. She has successfully conducted courses overcoming the barriers of language and culture. ‘Each course and every country is an enriching experience for me’, comments Kaushani. Everyone has accepted and appreciated this knowledge. She says, ‘It feels blessed seeing such a happy response from your audiences who belong to different cultures, speak different languages but so humbly get engrossed in learning Ayurvedic Cooking.’ To see and hear people implement the Ayurveda knowledge in practice, yields great sense of satisfaction and energizes her to innovate and share the knowledge endlessly.
