In layman's terms, how does the Anonytext Lite app on my Android phone
work? Does a text
sent through this app get billed against my cellphones alloted
messaging quota? Or ..
do you use some sort of email gateway to send sms to a carrier?

Unrelated question, but how are you tracking senders? By IP?

The AutoSMS engine which powers Anonytext utilizes public email-to-sms
gateways provided by various carriers. As a result, messages sent
through Anonytext have no impact on message quotas for senders, they
may however impact the quota for recipients.

Senders are tracked by various means as the operating system and/or
client application allows. In same cases it may be the IP address,
however that is not currently the case with respect to mobile devices
as the IP addresses provided by the carriers, or on a WiFi network,
are private and have very little use over the Internet. Most mobile
devices carry an ID which uniquely identifies them. Anonytext for
Android makes use of that ID to ensure that messages are properly
routed.
