Wifi name and password via serial

I've looked everywhere and I can't find the answer to this.
I have a project where I need to be able to assign the Wifi name and password after the esp32 has been flashed and programmed.
It's going to be used by my mother in Ireland who is in her 80's and has no knowledge of programming, and would not be able to use the web interface, because there's no way she could figure out how to connect to the Esp32.

My thought is set the Esp32 up with it flashed, and the program installed along with a small  touchscreen.

I'd like her to be able to input the wifi name and password on the screen and then the unit carries on doing what it was programmed to do.

Is this possible? or is there any way to do it?

yes you can use the function WIFI.CONNECT

Lew, my experience with older people tells me that I would have trouble typing (tapping) a complicated series of characters and numbers on a touch screen.
Surprisingly, they handle themselves perfectly by taking a photo and sending it to friends and family.
In my country, all operators include a sticker on the router with the name and password of the access point.
Unless your mother is going to use multiple Wi-Fi hotspots, it might be a solution.

I am not yet 80 - only 79.33 - but get frustrated using the mobile phone keyboards already.  The key next to the one I aim for often choses to appear - maybe its because I use fingers instead of thumbs.
Are you really going to implement a full Upper/lower/numeric/punctuation keypad in Annex?

Unless, as Fernando said, there will be multiple access points, I think an alternative would be better. 
How about using an SD card and sending a new one every time the SSID/password changes?
Obviously we are not aware (and are not asking for details) of the circumstances - but just asking can your mother tell you what the SSID/password is before you post the device?
