I know in night mode, the images colour are not inverted, but is it possible to invert LaTeX generated image in night mode? Because in night mode, some accent such as the \bar{} in LaTeX is difficult to see with the black background.

probably will, but would require me re-code all my latex codes?

Not necessarily; you can add

\usepackage{color}
\color{white}
\pagecolor{black}

to the header in the header of your card type as described here:

Then all your Latex (of that card type) will be inverted without you having to re-encode everything.
