Well, I don't know your background as far as your education or interests. What is your background and interests? You as a recruiter should know what is in demand. I don't suggest you go pick a skill that is in high demand and learn it, as it might be something you don't want to do. Most important to me is picking a job I like doing and am passionate about.

As far as schools around here, here is my 2 cents:

As far as getting prepared to write code, Normandale Community College is by far the best thing going around here. It is cheap, smaller classes and according to a U of MN professor the Normandale students are better prepared than the U of MN undergraduate students. This is obviously on an undergraduate level. You can get an A.S. in CSCI from Normandale, which is mirrored on the U of MN undergraduate first 2 years.

As far as 4 year schools or possible graduate in order of respected:

U of MN
Tie between Metro State University (way cheaper) and St. Thomas. Not sure of graduate studies at Metro State but they definitely are geared towards the older than average student or people who work.
I'd look more into Rasmussen honestly, I don't know the specifics of their programs but have heard good things.

Those 4 year schools are all subject to your personality. The U of MN is huge and can be very daunting to some. Metro State I honestly have not heard one bad thing about it, if I were to go back it would be there or a BAS at the U of MN.
Online schools/other:

I'd stay away from DeVry, University of Phoenix.
Capella is well respected geared towards Microsoft Certifications I believe.

If you are looking to do more of a support role or networking, Dunwoody is really good in the Networking area. Great placement, which honestly is almost unheard of nowadays. I've heard nothing but bad things about ITT Tech. Heard great things about Rasmussen, they prepare you to take MCITP and CCNA exams and I believe test cost wrapped into tuition.

I'd be happy to talk with you about things if that would help.

Whatever you decide, good luck!
