Try
BETA-SuperSU-v2.65-20151226141550.zip

It is not guaranteed to work
I renamed su.pie to su
I copied into /system/xbin

Mount the android partition, make sure you've installed it as read/write (installation), extract the SuperSU zip, look for su or su.pie, copy it to <android root dir>/system/xbin. that's all. (use any linux flavor to do the work, and make sure you're as root user to edit files).

Could you please explain what you did in detail? I tried to do this but SuperSU says there is no SU binary installed.

Here's what I tried:

1. Boot into SystemRescueCD (Linux live CD)
2. From terminal, mkdir mounted
3. mount -t auto -v /dev/sda1 mounted
4. Download and unzip BETA-SuperSU-v2.65-20151226141550.zip
5. Copy "su" from /supersu/x86/ to /mounted/android-6.0-rc1/system/xbin/ via file manager
6. Restart into Android-x86
7. Doesn't work; boot back up into the live CD
8. Mount again with the same above commands
9. Copy "su.pie" from /supersu/x86/ to /mounted/android-6.0-rc1/system/xbin/ via file manager
10. Rename it to "su" and restart

I can't figure this out.

Install SuperSU app from the Play store.
Get UPDATE-SuperSU-v2.78-20160905010000.zip (other versions might work but I only tested this one)
For 32-bit android-x86 extract x86/su.pie (I didn't test 64-bit or x64/su.pie)
Copy /system/xbin/su to /system/xbin/su.save
Copy su.pie to /system/xbin/su
chmod 755 /system/bin/su
Run:
su --install
su --daemon&
Then run the SuperSU app and it will be able to update su.
