Customized Android x86 build

Hi, 

I have some apps that don't work on read/write filesystem + with root binaries. 

Using the default build I cannot make this app work as if I mount read only filesystem, I cannot delete binary files, but if I mount read/write filesystem then after deleting I don't know how to re-mount it to read only mode. 

Any suggestions? Is it possible to customize  ISO and maybe exclude all those su files?
