What's in Android isn't really anything special afaik, it's just based
on dm-crypt:

http://en.wikipedia.org/wiki/Dm-crypt

The wiki page lists a few papers you could read: I'd start there and
then read the implementation within Android.

Is there anything Android specific with which you're having problems?

It may not be central to what you are looking at, but the Serval Mesh provides encrypted voice and data services on Android.
