The holiday, also known as Våffeldagen, originated in Sweden and coincides with the Feast of the Annunciation. It is also considered the start of spring in Sweden and Europe. It hence became a custom for Swedish families to celebrate the special day by making waffles.

After a 22-year run at 11th and Wharton, chef-owner Carman Luntzel closed the doors to her South Philly brunch sweetheart in December 2012. The three-table, two-counter spot with an 8-by-10-foot kitchen served many hungry guests and entertained diners with the "unique" souvenirs (think certain body organs) sprucing up the place.
The "Country" in the restaurant's name didn't refer to a rural connotation, but to different countries of the world. As such, Luntzel served dishes she'd sampled in her travels abroad alongside the type of food she grew up eating. The ever-rotating four-option menu--always a choice of pancakes or waffles, challah French toast, an omelet, or a savory entrée with a side of eggs-your-way--incorporated global flavors from sweetbreads to sour cherries to conch fritters. Carman's will no doubt be missed.
