Good evening,

As you know from tomorrow officially we are going to have refreshment of
the food, cocktail and wine items in our menu. For your convenience in
this email you can see all changes.


From the food items we are not going to have :
*Sausage platter, Cold potato salad, Pickled cabbage, Blue cheese
kajmak, Veal stew, Slow cooked pork.


Instead them we are going to have :
* Quinoa salad, Strawberry kajmak, Seasonal grilled vegetables, Summer
stuffed peppers, Ham and cheese crapes.

Slightly changes you will see in few dishes :

* Balkan kebab now comes with somun, zlatibor and marinated red onions
on a side.
* Stuffed sour cabbage will be served on different plate with mashed
potatoes and topped with yogurt.
* Seafood platter is going to be served with Organic slaw instead Cold
potato salad.

Changes you will see in our Specialty drink list as well – we are taking
out:
* Sava
* Dunja
* G&T
* Pear Daisy
* Sofia Negroni


Instead them we are going to add :
* Ultimate gin and tonic
* Rakija Gimlet,
* Visnja sour
* Negroni Punch
* Berry Daisy


In the wine list we are going to have :
*Stobi Veritas
*Zvonko Bogdan
*Stobi Rkaticeli

Since we still have few bottles of Montepulciano and Three Saints
Chardonnay the next days we will do daily competitions who will sell
most.

We are going to add Berry Daisy and BIP Beer to the Balkan experience
drink list. Miller light is going to be available for A La Card order.

Tomorrow we will roll out our new food and beverage menu. I would like
to share our new menu with you so you can be prepared for your first
shift. Please take a look and let me know if there is anything that we
should correct before we print them out.

Your help will be very appreciated.

Moving forward we will be offering only wines from the Balkan region. We
decided to make that move due to very low interest from our guest to
purchase wines which are not from the Balkans. Since we still have them
on our inventory we will organize a weekly competition. Rules are very
simple. The winner is the person who sell the most bottles of listed
wine from Monday to Sunday. We will have special prices for those wines
every night during the week which will help you to sell those wines
easier.


Bottles to sell:

1. Bibic R6 Riserva 6 bottles left
2. Visconti Montepulciano 17 bottles left
3. Three Saints Pinot Noir 26 bottles left
4. Three Saints Chardonnay 1 bottle left

Bartenders/Servers,

Product consistency is as crucial to profitability behind the bar. The
drinks you serve should taste the same regardless of the night or who’s
behind the bar. Otherwise, you may be serving a product that is
different in taste, cost and presentation from what we originally
intended. Inconsistency behind the bar leads to fluctuating costs and
hit-or-miss drinks.

In order to keep everything under control and to every bartender/server
makes the drink with the same recipe, I prepared a updated cocktail list
for you. This will be very useful not just for new staff members on
training but for everyone to refresh their knowledge.

Couple changes have been made so please go through the list carefully
and make sure to follow the recipe for each drink.

As we spoke few times on the pre shifts this week, we have to spend more
time to remind ourselves and learn the possible allergies from certain
ingredients in dishes. This week we are going to be focused on helping
each other in the process of learning to perfection all Gluten, Nut and
Diary allergies, all Vegetarian, Pescetarian and Vegan options in our
menu, plus modifications of dishes you could offer instead.

I can see the progress in the knowledge of all of you for the past few
days and now we just need to find strong ground for all the information
you already have and use all efforts to remember it.

Extensive product knowledge is the key to being a successful server.
Learning about our restaurant is an integral part of providing quality
service. It is vital to be familiar with all of our food and beverage
menu items and the ingredients that accompany them. It can be difficult
to answer menu related questions if you don’t have the proper knowledge.

Although selling Ambar’s food and beverages is part of your job, using
suggested selling will enhance your guests’ experiences and make you
more money. As a server in a restaurant you are almost guaranteed to
make a sale. There is little effort required in selling food and
beverages; however, with extensive menu knowledge you are more likely to
up-sell to the guest. Be prepared to routinely offer suggestions to our
guests and guide them through the dining experience. Guests will value
your knowledge and suggestions. While selling helps our guests enjoy
their visit with us, it will also add to your tips.

Giving recommendations, showing knowledge and concern for the best
experience of people (with allergies) is going to make you an “expert”
in guests’ eyes.

It was about time to organize the general cleaning of the whole
restaurant. While we are all trying to keep Ambar clean during our
regular hours, at some point it's necessary to organize some extra
cleaning. This time servers and bartenders will come at the same time
and do a cleaning on 3 different floors on three different days.

Attached you can find our new lunch menu. As you can see, the menu is
pretty much the same but we added a couple of items at Balkan fare
selection. Everything is in the system and you should be familiar with
all those items since we serve them during the dinner service.

New additions are :

2. Cheese Pie $7
3. Ham and cheese crepe $8
4. Spicy sausage $12
5. Balkan kebab $12
6. Summer pepper $11
7. CHEF'S PLATTER (consists of: veal soup, Balkan salad, cheese pie,
Balkan kebab and stuffed sour cabbage) $19.

Our guests will definitely have more options now but our focus will be
selling Chef's platter since they cant get the most popular traditional
Balkan dishes on one plate for $19.

Starting this weekend we will have few new items in our brunch menu. I
would like to share with you the descriptions of 2 new omelets, kebab
and burger.

HAM OMELET :


Ingredients:
- Ham(grilled)
- Balkan veggie(same as lamb sausage)
- Smoked Gouda cheese
- Egg(3 omelet)
- Spinach basil sauce( basil, spinach, cream ,garlic, vegeta)

A la carte- served with popara and potato hash

Method of Making:

We will be open for brunch on Monday and restaurant will start serving

We had a great week here at Ambar and you all did outstanding job. It’s
been so busy lately, but there is always time to stop and say thanks for

We are always pleased to hear that someone is willing to work more for
us, to pick up extra shifts, to pitch in when necessary. Ambar is a

decided to adjust the lunch schedule adding 2 utility bussers ON CALL on
Mondays and Fridays. This adjustment will improve our lunch service and

Good evening team,

For the past couple of months Chris and Ivan prepared for you tasty,
delicious meal on Friday before shift so you can be fully ready for work
at scheduled time and prepared for the busy night.
But the main reason to add the family meal on Friday was to spend some
quality time together and speak for everything we want as a team and
coworkers.

That's why this Friday we would love to prepare one big table at the
rooftop, so all of us can sit down and have lunch together. And if it
works well, that will be the beginning of a new tradition from now on.
We would love to create the atmosphere for family between coworkers and
to build great team spirit.

My day starts with strong Turkish coffee and TripAdvisor reviews. Yes, I
do enjoy reading those since most of them are very positive and our
guests are sharing good words about us. I enjoy even more those notes
when our guests recognize our skills that we actually pay attention to
every detail. Those details make a huge difference between us and any
other restaurant in DC. We are in different pace than our guest while in
restaurant, and they do have time to notice every single detail. One
of those details is our new A frame sign (Balkan experience $49) and I
was so excited to read a review after I saw that one of the guests
posted the picture of our new great looking A frame.

I was hoping for the best, bit I was disappointed at the end with the
content of that review. It made me feel that I wanted to give a call to
the guest, ask him to go out and get drunk together. Yes, I wanted to
deliver a guest real Balkan experience. At Balkan, we are pushing people
to eat, we don't accept no as a answer if they refuse a drink or rakia.
Balkans always complain that they don't have enough money, but somehow
they will bring the best food and drinks to the table. It's not a magic,
we call it BALKAN HOSPITALITY! That's what we do at Ambar. Delivering
BALKAN EXPERIENCE to our guests using BALKAN HOSPITALITY!

Every guest, every table or party is different. Your job as a
server/bartender/manager of your section/ is to read your table and push
the right button. If you have a nice shy couple who is asking for a
privacy, push the "privacy button". If you have a group of older guests
who were traveling around the Balkan region, push the "Balkan stories +
rakia button". Every guest or table has a button. You just need to push
the right one. If you are having issues with finding one for your table,
solution is to involve as many members of the team as possible so we can
all together make a best experience for our guests.

Please find and read this review and think what button would you use...

If you want to hear my opinion, I would push "one more glass of wine+
cheers everyone" button.

There is very thin line between very satisfied and unhappy customer. You
can deliver the best experience possible for 2h and than ruin the whole
experience in one sentence.

As a addition, I am sending you a very interesting article from New York
Times. Please find some time to read it as I think you can learn a lot.

Aleksandar Krsmanovic from Balkan wine project is coming on Monday,
August 8th at 2:30pm to train us and provide more information about
Balkan wines. This training is mandatory for servers/bartenders who are
scheduled for that day. Everyone else is invited to joins us. He is very
knowledgeable and and I truly believe you can learn a lot.

He will talk about: Stobi Zilavka, Stobi Rose, Stobi Rkasiteli, Budimir
Tamianika, Budimir Margus, Dveri Yanez and Istrian Malvasia.

Attached you can find some more information about Open Table and Trip
Advisor reviews for the month of July. Our motto is very simple:" Let's
just be better today than yesterday everyday." In other words, let's
have 4.9 rating on OT for the month of August so we can beat the numbers
from previous month.

Every guest who made a reservation through Open Table is marked with a
note WEB or VIP and each guest will get a email from Open Table to write
a review. We are doing great but we can be even better with small
adjustments. Check your sections before the shifts and communicate with
a hostess about reservations. Our obligation is to provide the best
service for everyone, but those guests should always get something from
us. Can be dessert platter, can be to go cookie, Balkan spreads, rakia,
wine tasting, hand shaking, gift card, Balkan sparkling wine, infused
rakia, Ambar matches...etc. Those guests made a reservation with a
specific reason - not to have someone who will just serve them. They are
coming to Ambar for a EXPERIENCE. Our job is to deliver!

Restaurant week is starting tomorrow. Our books look heavy on
reservations already and number of reservations will even grow during
the week. Due to a high volume of business we are expecting next week,
your schedule will be quite different than usual. Your hard work,

After 4 busiest weeks we had since we open the restaurant, it's was about a time to organize the restaurant/bar cleaning. Bellow you can find the schedule for cleaning on Tuesday, Wednesday and Thursday.
 
1 st Floor - Tigran(captain), Donevska, Simic, Alina, Kristen - Tuesday 2PM
 
Patio bar - Dima (captain), Yuliia, Marija Dimitrijevic, Bojan - Wednesday 1:30pm
 
2nd floor - Dijana (captain), Milun, Marta, Smiljana, Melvin - Thursday 1:30pm.
 
You will receive all the instructions from the manager on duty. Main focus will be our bars, but since we have more people in the teams than usual we will clean some parts of the restaurants that haven't been cleaned in a long time.

Moving forward after a lot of great and nice changes for our sweet Ambar  i thought is a good idea if we made official our lunch greet as well. We updated the lunch menu few months ago and we realize that the greet for dinner doesn't match perfectly for lunch service. Read the following:

My name is .................. and i will be your server today. We are Balkan inspired restaurant and our lunch menu offer variety of unique flavors. ( If it's your first time I strongly recommend you to choose from the Balkan fair options - here you can find some of the most authentic Balkan dishes.). As well you will see deal for $16 per person - includes 2 small handcrafted European style open faced sandwiches + drink and $13 deal - lunch size salad + drink.  - You MUST say that the sandwiches are SMALL, HANDCRAFTED and is possible to TAKE TIME to be served (especially if is big group).
 - If our guests decide that they want to order sandwiches you MUST give them option between regular and gluten free bread.
 - If our guests are here for first time offer them our Balkan fair (Chef's platter like a best option to taste a lot of authentic flavors) and explain to them about the sizes of the dishes in this section.

We want to remind you the importance of the total amount of guests you have at your tables. Please make sure if you have 2 guests at table 302 to click on N 2 when Micros ask you to Enter Number of Guests. If you have 4 guests on table 50-51 please add 4 guests in Micros system and not some random number. The reason why we are asking you for that is connected with the total number of covers the computer system is showing at the end of the night. If you don't add the correct amount of people at your table Micros makes miscalculations in the end of every shift. Let's try to help to uncle Micros to do his job better and help him with some numbers!

Attached you will find recipes for all cocktails in our menu.
 
Few times already we spoke about the importance of making drinks so you can be support for the bartenders and for yourself as well. Let's slowly learn all unlimited drinks - write down the recipes in your notebooks and in the beginning of each shifts we will practice with our bartenders. Once all of you feel comfortable to make them, each of you can show curiosity and motivation to learn how to make the rest of the cocktail list as well.
