TEAM,

I am excited to share that this week's Weekly Focus is about the New Beverage Menu and Dinner Menu Changes.

First, I would like to begin with the dinner menu changes.  These changes are minor in scale, compared to our most recent changes, but significant nonetheless.  Please see changes as follows:

DINNER MENU CHANGES

  1. Lamb Salami is now LAMB PROSCIUTTO 
  2. Lamb Skewers is now LAMB KEBAB
  3. Ambar Burger is now AMBAR SLIDER

These changes above can be seen in the attached dinner menu document (Dinner menu 49 June 2017).

Regarding, the new beverage menu, below are the following changes:

NO LONGER ON THE MENU

  1. NEGRONI PUNCH
  2. STRAWBERRY SPRITZ
  3. VISNJA SOUR
  4. AGRINA PORTUGUISER
  5. VUINA BABICA STAFILEO (still on the menu but this wine is discontinued and will not be able to be restocked once inventory is depleted)

STILL ON THE MENU BUT MODIFIED

  1. BEGLRADE MULE
    • Added to the recipe is our new Mixed Berry Cordial
    • Served in a traditional MULE MUG and garnished with a Lime Wedge
  2. ULTIMATE GFT (minor name change so that regulars don't expect the same taste)
    • While the name suggests a new cocktail, this has simply been modified with the change to Fever Tree Elderflower Tonic in place of just regular Fever Tree Tonic
    • Additionally, this cocktail will be garnished with edible flowers (like served for dinner item garnish on meat and cheese pies)
  3. KARAS, MUSCAT ( updated price for by the glass and by the bottle from $10/$39 to $11/$43)
  4. BULGARIANA CAB/SYRAH (by the bottle only)
  5. VALJEVSKO (will return with an updated price from $6 to $7)
  6. CORONA (updated price from $6 to $7)
  7. STAR HILL "THE LOVE" HEFEWEIZEN (updated price from $7 to $8)

NEW TO THE MENU

*New Categories for cocktails

  • LIGHT & REFRESHING
  • STRONG & BOOZY
  • SOUR & TANGY
  • SPICY AND SMOKEY

The purpose of these categories is to better help the customer make an informed choice, based on their interest, on what they would like to drink during their dinning experience.

The New Cocktails

  1. APRICOT COLLINS (LIGHT & REFRESHING)
  2. La FEMME (LIGHT & REFRESHING)
  3. SERBIAN SOMBRERO (SPICY & SMOKEY)
  4. ZASTAVA SIDECAR (SPICY & SMOKEY)

New Beer

  • PORT CITY OPTIMAL WIT
  • BUCKLER - NON ALCOHOLIC (not new but finally added to the menu for better sales

New Wines

  1. Bulgariana Gamza
  2. Bulgariana Pinot Noir
  3. Quadratus Syrah

It will take some time to get used to these changes.  Please take the time to study and get familiar with them. If you notice a mistake(s) of any kind, please do not hesitate to let me know.  Also, if you think there is a better process to making cocktails or set up or prep time, again, please do not hesitate share.  I will need all of your ideas and feedback to make these changes successful and not hurt our service.

Regarding cocktails, I have updated for each of the bars the drink list with recipes.  We will continue what we've started this weekend, practicing making the cocktails and soliciting customer feedback.  During our pre-shift these changes along with the dinner menu will be the focus.

Attached you can find copies of both the beverage and dinner menus.  Also, I have descriptions for the new wine and beer.

THIS COMING FRIDAY, JUNE 2ND BEGINNING AT 3:30PM WE WILL HAVE WINE TASTING AND TRAINING FOR THE FOLLOWING:

  1. BULGARIANA GAMZA
  2. BULGARIANA PINOT NOIR
  3. BULGARIANA CAB/SYRAH
  4. QUADRATUS SYRAH
