Chicken Soup for the Soul Healthy Living Series: Menopause: important facts, inspiring stories by Susan Hendrix (2005-08-02) in PDF
A recipe I'm very familiar with is that of Susan Hendrix's Chicken Soup for the Soul. I first came across it in her book, Eat, Pray. In case you don't know, it's a book about healthy living, focused on meals that are tasty, easy to prepare and cost-effective. One thing it did not include were stews or other long-lasting foods. Instead, it offered quick-cooked meals that were healthy and delicious. This book also had many recipes for soups, such as chicken noodle soup and beef stew.
Now, I don't usually buy books that are geared toward the "vast" variety of foods and lifestyle choices. That's just not my cup of tea, even though I've purchased plenty of books in that category. But, I did pick up Chicken Soup for the Soul because it was on sale at the time, and I wanted to give it a whirl for the next week's meal planning.
There are a number of chicken soup for the soul recipes out there, including the chicken-and-potatoes soup from Eating in the Golden Light, which is my favorite. (I don't normally buy that book, but I would if someone asked me for it.) I also love chicken soup in casserole form, so I looked into making a batch of that this week as well. For the month of October, I've been trying to stay away from store-bought soups because they tend to have artificial ingredients and preservatives, so I decided to try making a soup my own.
