PAL->NTSC conversion: Why does this work?

I took a PAL DVD, extracted the main title with Nero Recode (simple
extract, no other processing), used IFOEDIT to change every occurance of
PAL to NTSC in the .IFO files, and then burned the result to a DVD using
Nero's burner.

Playing the result with software players (VLC, Nero ShoTime) shows the
video as 720x576 @ 25FPS, which is PAL standard.

My old Sony NS50P won't play PAL DVDs, but plays the result perfectly,
without a complaint.

I used to have a Panasonic DVD player which wouldn't play DVD+R disks, but
if I used LiteOn's "booktype" program and marking them as DVD-R, they'd
play just fine.

So, is this just another case of the DVD player lying about its
capabilities, and so long as the IFO file says NTSC, it does all the
necessary conversion on playback?
