I´m in a similar situation, living in Southern Spain and going out with a
Spanish girl. We´re getting by, but sometimes it´s so frustrating not to be
able to say just how I feel..!

I hesitated before replying to this because I'm not the most brilliant
Spanish-speaker in the world; but you don't seem to have had any
takers. My phrases may not be 100% grammatically correct (although I
hope they are), but they won't embarrass you or lead to
misunderstanding! So here goes:
I think the best thing is to keep it simple (there's not much option
with my Spanish <grin>) . You could say something like: 'Eres la mujer
más hermosa/bella que he encontrado (visto) jamás' (You are the most
beautiful woman I have ever met (seen)).
or 'Pienso sólo en ti' (I think only of you).
or 'No tengo las palabras para decirte todo lo que está en mi corazón.
(I haven't the words to tell you all that is in my heart).
or 'Eres mi alegría' (You are my happiness/joy).
You could make use of the phrase that has been the subject of much
discussion on this board recently: 'Te quiero a ti' (I love you). And
*do* keep in the 'a ti'. Those two words are saying that of all the
women you have met or will meet or could meet. it's *she* you love.
Spanish is a language capable of great subtlety in a few words, thanks
to some of its grammatical constructions.
And don't forget the first line of the beautiful Cuban song
Guantanamera: 'Yo soy un hombre sincero' (I am a sincere man).
You probably already know 'querida' (darling) and 'mi amor' (my love).
What you said in your message is fine: it just needs a couple of
pronouns: 'Cuando estás cerca de mí, mi corazón se regocija'
I think that's about it , but remember 'El amor no necesita las
palabras' (love doesn't need words).

I must admit, I am impressed that some many people have responded to
Shawn's request, without including the words "Echar" or "Chupar" even
once. I know I was sorely tempted ;o)
Worse still would have been the Infamous "Mi mujer es contable." as
used in an English soap opera.
