> what's the difference between "einsammeln" and "sammeln"?
(to) pick up, or gather (einsammeln) vs. (to) collect (sammeln).

"Sammeln" is a general word for "to collect," "to gather" used in many
contexts:
ich sammle Briefmarken (I collect stamps);
ich sammle Münzen (I collect coins);
ich sammle Schmetterlinge (I collect butterflies);
wir sammeln Unterschriften (we're collecting signatures);
du solltest keine Reichtümer in dieser Welt sammeln (you should not collect
riches in this world);
ich muß meine Kräfte sammeln (I've got to collect my strength);
ich muß mich sammeln (I've got to collect my thoughts);
ich gehe Pilze sammeln (I'm going to gather mushrooms);
er sammelte seine Jünger um sich (he gathered his disciples around him);
die Mücken sammelten sich um die Flamme (the moths gathered around the
flame).
In "einsammeln" the prefix "ein" restricts the meaning of the verb and the
word often translates as "to pick up," "to gather up":
Gernot wurde böse, sammelte seine Spielsachen ein und ging nach Hause
(Gernot got mad, picked up his toys and went home);
wir ließen unsere Stimmzettel auf dem Tisch liegen und Hagen sammelte sie
ein (we left our ballots on the table and Hagen gathered them up);
der Lehrer sammelte die Hefte ein (The teacher took up the exercise books).
Hope this helps a bit.
