I don't know where Jerry Horne got this pig. It was some time ago.
Maybe in New York as you said? Probably, David Lynch got it.

Let's examine at the facts:
1) Cheese pigs have been seen - it wasn't just an 'invented' prop*
2) They are made of Porvelone - a smoked italian cheese.
3) Jerry Horne was seen eating one in the Great Northern Hotel.
So this raises questions:
1) Where did they film the interior shots of the Great Northern?
2) Is there a deli nearby - and if so - do they sell italian cheese?
3) What really went on between Marilyn Monroe and the Kennedys?
*I am, perhaps somewhat naively, assuming Twin Peaks didn't inspire the
entire "Smoked Cheese Pig" industry.

First idea: pigs was close to place of shooting and they bought a lot
of smoked pigs because they were well-looking. They had not any meaning
for the movie.
Idea no 2: Lynch or Frost thought that pig had any meaning for the
scene and looked for cheese pig until found and ordered smoked pigs
from Italy (or other country).
I think that smoked cheese pigs was being made long time before "Twin
Peaks" was released. It is possible that somebody wants to buy this
cheese after watching "Coma". I know that some kind of cheese pigs was
being made many years ago in Poland (also in the other shapes of pets -
"oscypki") but they looked not the same as Jerry's pig.

I think /a lot/ of TP was made on an ad-hoc basis. The Smoked Cheese Pig
isn't in the shooting script

something that interests or amuses them, and then they put it in. As long
as it fits the theme, then it's ok. Several scenes, and even the casting of
BOB occured like that.
Having said that...
The "smoked" could relate to the burning of the Packard Saw Mill, the "pig"
is often a symbol of wealth & greed - and so perhaps the ledgers, and the
cheese...
That we have one *processed* food: smoked cheese, in the shape of another
*unprocessed* food: a live pig, again could be a reference to the fake
ledger, it's "cooked" or altered to look like something natural.

Some of The Great northern interior shots were made in a town called
Poulsbo, at Kiana Lodge

"Poulsbo Deli" I came across the obituary for one Mildred Bartle, which
reads:
"She moved to Poulsbo in 1973 where she purchased and operated
*Poulsbo Country Deli*. She won the State Small Business Award in 1989.
She ran the business until her retirement at the age of 85."
So, the business would have been at full swing during the filming of TP.
Searching for *Poulsbo Country Deli*:
Perhaps someone there remembers David Lynch buying cheese-products?

Both Italy and Poland have Smoked Cheese Pigs? so perhaps there is a strong
European traditional / folksy / rural-craft influence? A love of
european-exoticism is fitting for Jerry's character.

Yeah, it is possible. Block of cheese wouldn't be a symbol of anything.
