Not very energy efficient... how much gas or electricity did she use
to power the stove to boil the water for 15 or more minutes just so
she didn't have to use the peeler?

The skin's the ebst part, so it's not as issue for me.
Besides, one doesn't use that kind of potato because it falls apart.

My municipality has curbside single-stream. We recycle everything we
can.

I usually make the sauce from paste, and I also recycle the Contadina
cans.

The Ragu is too sweet for my tastes, but it is nice and adicy as well.

But if you're boiling the potatoes for the purpose of making mashed
there's no extra energy expended. This method, which I haven't tried
yet, certainly looks easier than peeling the spuds first. -aem
