Seth Bullock, along with a few of the other major characters, was a
real person who figured prominently in Deadwood's history and died in
1919 at the age of 70, so it's not likely they'll get rid of him.

Bullock serves a purpose. On one level he is the stable, responsible figure
to balance the forces of chaos. He is also almost psychotically violent just
under the surface. With Bullock, you are never sure when he is going to
"break bad." Wild Bill Hicock's character was, by comparison, far more
rational, but still flawed.
Is Bullock devoted to Martha out of love? duty? guilt? All of those?
Martha is who she is, the late 19th Century woman with emotions and perhaps
ambitions, constrained by society.
They both work as characters amid the others. I say keep them.
Two others have responded with good reasons for keeping Bullock, which is where
I'm at. I think things may heat up a tad between him and Mrs. Ellsworth at some
point next season, which will be interesting and Olyphant is a good actor whom
you wouldn't be able to recycle like Dillahunt, so why cut him?

I think the character keeps himself under very tight control because he
knows he can get very OUT of control. We've seen him out of control a few
times in very diverse situations (in bed with Alma vs. brawling in the
street, for example) but the rest of the time he keeps a lid on his
emotions. It's a hard character to play but I think he gives a good
interpretation of someone who is simmering mightily just beneath his stoic
veneer.
I get a bit uncomfortable, during the scenes between
Mr and Mrs Bullock. Good acting, on their parts,
because the characters are obviously uncomfortable
during their exchanges.
I find myself wanting the scene to just *end*. Or, for
one of them to just explode.

She did once. Of course, it made no sense to me (I mean I understood what
was happening but her dialogue was a bit convoluted for my tastes) so maybe
we have TWO people with emotions simmering out of control beneath their
stoic exteriors.

Good take, and that's how I see the character as well. I enjoy watching him,
because as you pointed out so well, you never know what he'll do. Most of
the time, he controls himself and doesn't really do anything, but every now
and again...
