Tomorrow, I'd like to make a sheet pan dish of crispy tofu with spicy ground
shrimp. I have no trouble preparing the individual components; I just need to
know how to get the firm tofu pressed into the sheet pan before crisping it up
by roasting. Should I whiz it
in the food processor, slice it with a cleaver or press the tofu bricks into
the sheet pan greased with peanut or sesame oil?
