Delicious Multi-Grain Pancakes

DH and I made these for our traditional, Sunday morning
brunch today -- and they are *out of this world* good -- and
loaded with complex carbs. Recipe is from the Cooking Light
website (http://www.cookinglight.com). They are 1 point per
pancake. We had three each (tossed a can of chopped pears
into the mix as well) with butter and syrup, turkey bacon (1
point per slice and just as good as the "real thing," IMO),
orange juice, and coffee (w/cream and sugar) for a 12 point
brunch. Not too bad for a big brunch with all the fixins'.

Multigrain Pancakes

1/2 c. all-purpose flour
1/2 c. whole wheat flour
1/4 c. quick cook oats
2 T yellow cornmeal
2 T brown sugar
1-1/2 tsp. baking powder
1/2 tsp. salt
1 c. skim milk
1/4 c. plain fat-free yogurt
1 T vegetable oil
1 large egg

Optional ingredients: chopped pears, peaches, or apples
berries
mashed bananas
pecans
cinnamon

Combine first 7 ingredients; stir well. Combine remaining
ingredients; stir well. Add to flour mixture, stirring
until smooth.

Spoon about 1/4 c. batter for each pancake onto a hot
nonstick griddle or nonstick skillet. Turn pancakes when
tops are covered with bubbles and edges look cooked.
